Ingredients:
- 4 cups of fresh summer berries strawberries, blueberries, raspberries, or a combination
- 1 1/2 cups of granulated sugar
- 2 tablespoons of lemon juice
- 1 teaspoon of vanilla extract
Instructions:
Wash and hull the berries, then place them in a large mixing bowl
Add the sugar and lemon juice to the berries, and gently toss to combine
Let it sit for 30 minutes to macerate and release juices
Transfer the berry mixture to a large pot and bring it to a simmer over medium heat
Stir occasionally
Once the mixture is simmering, reduce the heat to low and let it cook for 20-25 minutes, or until it thickens and reaches your desired jam consistency
Stir in the vanilla extract
Remove the pot from heat and allow the jam to cool for a few minutes
Carefully pour the jam into sterilized jars, leaving a bit of space at the top
Seal the jars tightly
Place the sealed jars in a boiling water bath for 10 minutes to ensure they are properly sterilized and sealed
Remove the jars and let them cool to room temperature
Label the jars with the jam flavor and date before storing them in a cool, dark place
