Best Italian Wedding Soup



This Best Italian Wedding Soup is a crowd-pleaser with savory meatballs, tender pasta, and fresh spinach in a flavorful chicken broth. It's a perfect comfort dish for any occasion!

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup acini di pepe pasta
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste

Instructions:

In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, and beaten egg

Form small meatballs and set aside

In a large pot, saut chopped onion and minced garlic until softened

Add chicken broth to the pot and bring to a simmer

Gently drop meatballs into the simmering broth and cook for 10 minutes

Stir in acini di pepe pasta and cook according to package instructions

Add chopped spinach and cook until wilted

Season with salt and pepper to taste

Serve hot, garnished with additional Parmesan cheese and parsley if desired
