Slow Cooker Gluten-Free Pinto Beans



These gluten-free pinto beans cooked in the slow cooker are a hearty and flavorful dish that's great for a comforting meal. The beans are cooked slowly with fragrant vegetables and spices. This makes a filling gluten-free recipe that is simple to make and tastes great.

Ingredients:

  • 1 pound dried pinto beans, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can 14
  • 5 ounces diced tomatoes
  • 4 cups gluten-free vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish optional

Instructions:

Place the dried pinto beans in the slow cooker

Add chopped onion, minced garlic, chopped green bell pepper, and chopped red bell pepper on top of the beans

Pour in the can of diced tomatoes and gluten-free vegetable broth

Season the mixture with ground cumin, chili powder, paprika, salt, and pepper

Stir everything together to combine

Cover the slow cooker and cook on low for 7-8 hours or until the beans are tender and cooked through
