Ingredients:
- 4 boneless, skinless chicken breasts, cut into cubes
- 1 cup red wine
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Wooden skewers, soaked in water
Instructions:
Red wine, balsamic vinegar, honey, minced garlic, and dried thyme should all be put together in a small saucepan
Over medium-low heat, bring the mixture to a simmer
Let it cook down by half, stirring every now and then
It should take around 15 to 20 minutes
Once it's almost gone, take it off the heat and let it cool down a bit
Add salt and pepper to the chicken cubes, and then put them on the wet wooden skewers
Set a grill or grill pan over medium-high heat to get it hot
Make a sauce out of red wine and brush it on the skewers
For 8 to 10 minutes, flip the skewers every so often until the chicken is cooked all the way through and has a nice char
The chicken skewers should be served hot, with extra red wine reduction sauce on the side for dipping
Enjoy with a glass of the red wine that's still left!
