Fire-Grilled Foil Packets



Putting these foil packets over a fire is a quick and easy way to enjoy a tasty barbecue without all the work. Great for a camping trip or a barbecue in your own backyard!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup baby potatoes, halved
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 lemon, sliced
  • 4 sheets of heavy-duty aluminum foil

Instructions:

Preheat the grill to medium-high heat

In a large bowl, mix the chicken, potatoes, carrots, broccoli, tomatoes, and minced garlic

In a small bowl, whisk together the olive oil, salt, pepper, paprika, oregano, and thyme

Pour the olive oil mixture over the chicken and vegetables, tossing to coat evenly

Divide the mixture evenly among the four sheets of aluminum foil

Top each packet with lemon slices and fold the foil to seal the ingredients

Place the foil packets on the preheated grill and cook for 20-25 minutes, or until the chicken is cooked through and vegetables are tender

Carefully open the foil packets, and serve the delicious fire-grilled contents on plates
