Chickpea Avocado Salad



This chickpea and avocado salad is full of healthy fats, protein, and bright flavors. You can eat it for lunch or as a side dish with any other meal.

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions:

Put chickpeas, avocado, cherry tomatoes, red onion, and cilantro in a large bowl

Add lime juice and olive oil to the salad

Add pepper and salt, and then gently toss everything together

Put it in the fridge for 30 minutes before serving or serve it right away
