Ingredients:
- 2 medium sweet potatoes, peeled and cubed
- 2 apples, thinly sliced
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey or maple syrup for vegan
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
Toss the sweet potato cubes with 1 tablespoon of olive oil and season with salt and pepper
Spread them on a baking sheet and roast for 20-25 minutes or until tender and slightly crispy
Let them cool
In a large bowl, combine the roasted sweet potatoes, sliced apples, diced avocado, chopped red onion, and cilantro
In a separate small bowl, whisk together the remaining 1 tablespoon of olive oil, apple cider vinegar, honey or maple syrup, and a pinch of salt and pepper
Drizzle the dressing over the salad and gently toss to combine
Serve immediately or refrigerate for later
